Healthy Recipe #28

Take advantage of the fresh corn that is available this season and enjoy this easy soup. If you don’t have fresh corn, use frozen corn that is thawed and drained.
Sweet Corn Soup
10 ears of white or yellow corn
3 1/2 c vegetable broth
2 T unsalted butter
2 medium size onions, chopped
salt and pepper
2 1/2 c low fat milk
cilantro leaves for garnish
1.) Husk corn and slice kernels into a bowl using a sharp knife. You should have about 6 cups of corn. Set aside one cup of corn to stir into the pureed soup. Put the the remaining corn and broth in a soup pot and simmer, covered for about 15 minutes.
2.)In a skillet, melt the butter and chopped onions with a dash of salt over medium heat until soft and golden, 25 minutes- 30 inutes. Add the onions to the corn, along with the milk and puree the soup in a blender, in batches, until smooth.
3.) Return to pot and add reserved kernels, salt and pepper to taste.
4.) Serve hot and garnish with cilantro leaves. Serves 6-8

Healthy Recipe #27

With the farmer’s market in full bloom it’s easy to enjoy a salad every night of the week.
If you’re getting a little tired of olive oil and vinegar - change up the dressing and accompaniments. Here are a few suggestions:

Sweet Dijon Dressing
1/3 c red wine vinegar
1/2 t salt and pepper
1 T Dijon Mustard
1 t sugar
1/2 c olive oil
Whisk together and serve with spring mix, blue cheese, sliced green apples and cranberries.

Asian Sesame Dressing
1/2 c rice wine vinegar
1/2 t low sodium soy sauce
2 T honey
1/2 t fresh grated ginger
2 t toasted sesame seeds
1/2 t sesame oil
2/3 c canola oil
Whisk together and serve with romaine and baby spinach leaves, toasted cashews, sliced water chestnuts and tangerine or orange slices.

Caesar Dressing
2 eggs
3 garlic cloves, peeled
2 T lemon juice
2 T worcester sauce
1 t salt and pepper
1 t dry mustard
1 c olive oil
4 T parmesan cheese
1 ( 2 oz) can anchovies, drained
Puree the above ingredients in a food processor until fully blended. Keep refrigerated.
Serve with romaine lettuce, grated parmesan cheese and freshly toasted croutons. Add chicken or shrimp to pack some protein into this salad and it becomes a meal.

Walk # 2 - July 17, 9:00am

Our ‘Joy of Walking’ series continues this summer with our second group walk. This walk will be 3 miles in distance and have one moderate size hill. We will meet in the church parking lot at 9 am sharp for stretches and then be on our way. Please let Sandra know you will be attending via e-mail (slane819@yahoo.com) or the sign up sheet in the back of sanctuary. If you have any apprehensions about the hill- please e-mail me and I’ll tell you where you can meet us at the top and still have plenty of distance to walk. Don’t let the hill be the reason you do not join us, please!!!
Hopefully, you are keeping up with your walking journals- if you have not received one - there will be some available on July 17. If you are unable to attend the July group walk - please try to keep up with your walking on your own so you can join us for the 4 mile walk in August. You can do this!!

It’s been a warm summer so far, so please dress in light clothing, wear sunblock, bring a water bottle and most importantly, wear supportive sneakers.

Everyone who attends the July walk - will get their name put into the raffle 3 times for the chance to win a free 30 minute massage and consultation from Sewickley Chiropractic.
