Healthy Recipe #24

Simple Poached Apricots
3 c water
1/4 c plus 1 T agave nectar
4 strips orange peel, each about 3 inches long
6 medium-ripe apricots, pitted and cut into quarters
1.) Bring water, agave nectar and orange peels to a simmer in a medium saucepan over high heat. Add apricots, pushing down to cover with liquid; reduce to a gentle simmer. Cook until apricots are tender, 2-5 minutes.
2.) Transfer apricots with slotted spoon to bowl or dish. Pour just enough liquid over them to cover and return saucepan with remaining liquid to stove. Simmer over med- high until reduced by half and lightly syrupy, about 10 minutes.
3.) Strain syrup into dish with apricots. Refrigerate for at least 1 hour and serve with vanilla yogurt or icecream.

Many thanks to Bobbie Sams for sharing her time and gifts with us.
Here are the “7 Secrets to Successful Weight loss” (not really all that secret, but very good reminders)
1.)Low-fat and low-calorie eating. 1300-1680 calories/day. Maintain this style of eating long term.
2.) Eat 4-5 times/day. Smaller portions and keep this consistent.
3.) Eat breakfast !!!
4.) Exercise a lot!! 60-90 minutes per day
5.) Weigh yourself daily or weekly or check that notch on the belt.
6.) Limit screen time ( TV, computer) no more than 10 hours/week
7.) Hold that line!! Keep yourself in check - if you feel that belt tightening up - make the necessary changes to get back on track.

Here is a guilt-free dessert that is easy to put together.
Pina Colada Yogurt Parfait
Using a parfait or other pretty glass…
1.) place 1/4 cup of mandarin oranges in the bottom of glass.
2.) top with 1/3 cup low fat vanilla yogurt
3.) top yogurt with 1/4 crushed pineapple
4.) repeat the layering of oranges, yogurt and pineapple.
Top with toasted shredded coconut.
