Don’t be discouraged by the number of ingredients - this comes together pretty easily once you get your veggies cut up.
Roasted Vegetable Pie
1 small cauliflower, cut into florets
1 small butternut squash, peeled and cut into 1 inch pieces
2 medium parsnips, peeled and cut into 1/2 inch pieces
1 cup baby carrots
1 sweet red pepper, cut into 1 inch pieces
2 T olive oil
1/2 t salt
1/2 t black pepper
1 c vegetable broth
1 T cornstarch
3/4 t dried thyme
3/4 t dried oregano
2 T plain bread crumbs
1 package refrigerated pie crusts
2 T parmesan cheese
1 egg beaten w/ 1 T water
1.) Heat oven to 450 degrees. Coat a baking pan with cooking spray.
2.) In a large bowl, toss all cut vegetables with olive oil and 1/4 t each of salt and pepper. Pour into baking pan and roast in oven for 30 minutes, stirring at halfway point.
3.)Meanwhile, place the broth in a saucepan and stir in cornstarch. Bring to boil, lower heat and simmer for 1 minute until thickened. Stir in thyme, oregano and remaining salt and pepper.
4.) In a bowl, toss the roasted vegetables, bread crumbs and sauce together.
5.) Fit one pie crust into deep dish pie plate. sprinkle 1 T parmesan cheese over bottom. Spoon in vegetable mixture and sprinkle 1 more T parmesan cheese over veggies. Place the second pie crust on top and crimp crusts together. Pierce a few times with knife and brush with egg/water mixture.
6.) Bake at 450 degrees for 15 minutes. Lower to 425 degrees and bake an additional 30 minutes. Allow to cool before slicing.

Thai Honey Peanut Sauce
This sweet and spicy sauce is yummy with steamed vegetables like asparagus, grilled eggplant or cooked green beans.
1/2 c honey
1/4 c peanut butter
2 T soy sauce
1 T chopped fresh cilantro
1/8 t crushed red pepper flakes
Combine all the ingredients in a bowl and mix until blended, serve over cooked vegetables.
