Site Location: Sewickley Heights Community building. This brand new facility is nestled in the woods in Sewickley Heights Park and will be a perfect venue for our retreat.

Garlic-Basil Shrimp
2 T olive oil
1 1/4 pounds large shrimp, peeled , deveined
3 garlic cloves, minced
1/8 t crushed red pepper flakes
3/4 c dry white wine
1 1/2 c grape tomatoes, halved
1/4 c finely chopped fresh basil
Salt and pepper to taste
3 cups of cooked whole wheat orzo pasta
1.) Heat oil in skillet at medium-high heat and add shrimp. Cook, turning over once until cooked through, about 2 minutes. Remove and transfer to bowl.
2.) Add garlic and red pepper flakes to the oil remaining in the skillet and cook until fragrant, about 30 seconds.
3.) Add wine to skillet, stirring occasionally for 3 minutes. Stir in tomatoes and basil and S&P.
4.) Return cooked shrimp to pan and cook just until heated through.
5.) Toss with cooked orzo and top with parmesan cheese.

Butternut Squash Soup with Coconut Milk
2 t olive oil
1 red onion, chopped
15 oz. can low sodium chicken broth
3 pound butternut squash, peeled and cut into cubes
1/4 t freshly grated nutmeg
1/4 t mild chili powder
15 oz can light coconut milk
1/4 c unsweetened shredded coconut
1/4 c toasted, chopped peanuts
1.) Heat oil in pot and add onion. Saute for 8-10 minutes. Add 3 T of broth to prevent the onions from sticking.
2.)Add squash, nutmeg and chili powder. cook for 3 minutes.
3.) Add coconut milk and remaining broth. Bring to slow boil stirring once or twice. cooking for 15-20 minutes.
4.) Using a blender, puree the soup in batches until smooth and transfer to bowls. Sprinkle with shredded coconut and peanut pieces.
