Healthy Recipe #15

Warm Spinach and Squash Salad

1 1/2 pounds butternut squash, peeled and cubed
4 T olive oil
1/2 t salt, divided
Freshly ground pepper
3 T lemon juice or red wine vinegar
5 c baby spinach leaves
1/2 c toasted sliced almonds

1. Preheat oven 400 degrees. In a 9x13 baking dish toss squash with 1 T olive oil, 1/4 t salt and some pepper. Bake for 20 minutes.
2. In a large bowl, mix juice or vinegar with 1/4 t salt. Add squash, spinach and almonds.
3. Heat remaining 3 T of oil in a small frying pan over medium-high heat. Carefully pour over salad and toss to coat and wilt spinach evenly. Serve immediately.
Serves 4
