Cooking with Kitty Leatham and Kate Jeffe, the Green Chefs

Church Kitchen/Simpson Room
Please join us for this hands-on workshop where Kitty will discuss organic cooking and how easy it can be. We will work together as a group to make three vegetarian meals that each participant can take home to enjoy for the week.
Meals will include:
Magic Mineral broth - delicious vegetarian broth that will be the base for the following dishes
1.) White bean, kale and sweet potato soup
2.) Wild mushroom and spinach lasagna
3.) Butternut squash risotto
Please bring with you a container for 1 quart of soup and (2) 8x8 pans to store your meals. The workshop will be limited to 8 people and will be $50 (covers the cost of food), payable to Kitty Leatham - so don’t wait to sign up. Please give Sandra Lane your name and money/check asap.
Interested in exercising your mental muscles? We are forming a book club at SUMC that will meet about 6 times per year (during the ‘less busy’ months). Our goal is to read a variety of good books that stimulate discussion. To kick things off, we will be looking at “The Time Traveler’s Wife” - a wonderful love story with a twist. At our first meeting, we will look at book selections for the upcoming months, so bring your suggestions / preferences with you.
First Meeting: Tuesday, October 6th at 7 pm, in the library

It is the responsibility of group members to locate and read the book before the meeting for discussion. Suggestions: Amazon.com has used copies for sale, the Sewickley Public Library has the book in it’s catalogue and it can be ordered through the Carnegie library system, PLUS the fall Sewickley Public Library booksale happens this Sept 11-13, so you may be able to pick up a bargain there as well!

Vegetarian Chili
2 T olive oil
1 large onion chopped
1 1/2 t garlic powder
2 T chili powder
1/4 t dried basil
1/4 t cumin
2 cups zucchini, diced
1 c carrots, sliced
2 cans (14.5 oz) Rotel diced tomatoes
15 oz can garbanzo beans, drained
15 oz can kidney beans, undrained
8 oz can tomato sauce ( optional)
1. In a large pot, heat oil over medium heat and saute onions until soft and tender.
2. Add remaining ingredients and bring to boil. Reduce heat and cook 30 minutes.
If chili is too thick and you prefer to water it down - add some of the optional tomato sauce.
