Healthy Recipe #10

Scallop and Broccoli Toss

1/2 pound whole wheat linguine
1 head broccoli, cut into florets
1/2 c vegetable broth
2 T reduced sodium soy sauce
2 T ketchup
1 T sugar
1/2 t hot sauce
1 1/4 pounds sea scallops, cut in half horizontally
1 can (5 oz) water chestnuts, drained and quartered
1 t sesame oil

1. Cook linguine according to package directions. Add broccoli during the last 5 minutes of cooking and drain.
2. In a small bowl, whisk together the broth, soy sauce, ketchup, sugar and hot sauce.
3. Place the broth mixture in a large skillet and bring to simmer. Add scallops and water chestnuts and simmer for 4 minutes turning halfway through or until cooked through. Remove from heat and stir in sesame oil.
4. Place cooked pasta and broccoli in the skillet and toss with scallop. Serve immediately. Serves 4

Hike Follow-up

Many thanks to Diane for leading us on a great hike through War Memorial Park. There were 22 friends who came together and enjoyed the beautiful morning and trek through the woods. Diane mentioned some Pittsburgh Hiking groups that have no club membership fees - you can simply find a hike of your choice and show up - here are the groups she suggested:

2.) Sierra Hiking Club www.alleghenysc.org
3.) Meet Up Hikers www.meetup.com/pittsburghhikers

We will do another hike on August 29, 9am; this will be an easy to intermediate hike, more details will follow. We hope you’ll join us.

Whatever your H & W goals may be - short or long term - please write in the comments section and share them !! This is your opportunity to proudly let us know how you’re doing; your success can help motivate others. Perhaps you lost a few pounds or you made it through a week praying daily or going to bed by 10pm, or eating well. If you finally took some needed time for yourself to read a book, go to an exercise class or meditate, let us know. Maybe you made it through the weekend bbq’s without any sugary treats or drinks …. you get the idea. No success is too small to share. I congratulate you and ask you to not be shy - let’s hear about it!

Move On and Forward !!

Okay -the Fourth of July is over and you may have over eaten, drank too much, didn’t work out, didn’t go to church, whatever. You need to honor and accept your indulgences but realize that life can’t go on like that everyday - because it would not be a healthy one. Make the commitment to get back on track today and then take a moment to thank God for giving you the strength to do so.

Healthy Recipe #9

Summer Pea Soup
3 T butter or margarine
1 large onion thinly sliced
salt
5 c water
3 c fresh peas or frozen petite peas

1. Melt butter in large pot over medium heat. Stir in onion and pinch of salt. Cook stirring until tender, about 7 minutes. Add water and bring to boil.
2. Add peas and simmer, stirring occasionally, 4-5 minutes.
3. Puree soup in small batches in blender. Taste to adjust seasoning and serve hot or store in container and refrigerate and serve cold.
4. If you want to indulge a little - add a splash of cream to the soup before the puree stage.
